Pour préparer un mai tai pour 20 ou 40 personnes, on vous propose une recette pour 20 personnes, à dupliquer dans un deuxième punch bowl. Pourquoi ? Pour garder le deuxième au réfrigérateur et le sortir au dernier moment. L’été, les cocktails ont rapidement chaud !
Ingrédients :

- 80 cl de rhum Ambré des îles Old Nick
- 40 cl de sirop d’orgeat
- 40 cl de jus de citron vert et 20 rondelles
- 40 cl de liqueur d’écorce d’orange
- 20 brins de menthe fraîche
- Glaçons sous forme de cubes et de glace pilée.
Préparation :
- Remplissez un grand bol ou un saladier à moitié de glace pilée (glaçons passés au mixeur).
- Versez le rhum, le sirop d’orgeat, la liqueur et le jus de citron. Mélangez le tout à l’aide d’une grande cuillère.
- Tapez les rondelles de citron vert et les feuilles de menthe, pour en faire ressortir les arômes. Ajoutez-les au mélange.
C’est prêt ! Prévoyez à côté un seau à glace, pour que vos invités ajoutent des glaçons dans leur verre. Préférez-les sous forme de cube, pour qu’ils fondent moins vite.

Vous voyez ces cocktails surmontés d’une fumée blanche, servis dans l’ambiance sombre d’un bar ? Impressionnants, non ? On vous dit tout pour réaliser chez vous ces fameux cocktails fumants. Il ne vous reste plus qu’à tamiser la lumière et l’effet est garanti.
Cocktail fumant avec de la glace carbonique
Pour réaliser un cocktail fumant, la glace carbonique – manipulée avec précaution – est l’ingrédient qui permet d’obtenir le résultat le plus spectaculaire. Et contrairement à une idée reçue, elle n’est pas uniquement destinée aux professionnels. De nombreux commerçants en ligne proposent de livrer les particuliers. À réserver cependant pour les événements d’ampleur, puisqu’il faut souvent en commander au moins 5 kg pour être livré.
Alors la glace carbonique, qu’est-ce que c’est ? Il s’agit de dioxyde de carbone porté à – 78 °C. À une température aussi basse, il prend l’apparence de la glace. Lorsque le produit est ensuite réchauffé, il retrouve sa forme gazeuse par un effet de « sublimation ». D’où la fumée qui s’échappe de votre cocktail quand un stick de glace carbonique y est plongé ! Le tout sans dégager ni odeur, ni saveur.
Si tout cela semble facile, la manipulation de la glace carbonique demande de faire très attention. Lorsque vous les recevez, les bâtonnets de glace carbonique sont placés dans un emballage en polystyrène : ils doivent y rester. La boîte en elle-même doit être stockée dans un endroit sec et aéré (pas le frigo ni le congélateur), hors de portée des enfants et des animaux. Ne commandez pas la glace carbonique trop à l’avance, elle ne se conserve que 72 heures maximum. Et préférez les bâtonnets plutôt qu’un gros bloc, c’est plus facile à manipuler.
Pour vous servir en glace carbonique, protégez vos doigts avec des gants anti-froid. Les bâtonnets doivent être attrapés avec une pince ou une pelle en plastique, mais jamais avec la main. Une fois que les bâtonnets sont versés dans le cocktail, prévenez vos convives : il ne faut surtout pas les avaler ou les toucher. Pour cela, vous avez deux solutions : mettre une paille dans vos cocktails ou demander à vos invités d’attendre que l’effet fumée soit terminé, avant de le déguster (un bâtonnet se dissout en 5 à 7 minutes).
Kit fumoir et smoking gun pour un cocktail fumé
Si le goût fumé vous intéresse et que vous êtes prêt à dépenser quelques dizaines d’euros, vous pouvez opter pour un kit fumoir. Celui-ci est composé d’un fumoir en bois, de copeaux de bois et d’un chalumeau de bar. Le principe est de placer le fumoir sur votre verre à cocktail et d’y brûler des copeaux de chêne, de cerisier ou encore de pommier. De quoi ajouter une dimension sensorielle à votre cocktail maison.
Si vous êtes déjà un grand amateur de cocktails fumés, vous pouvez aussi avoir envie d’investir plus d’une centaine d’euros dans un smoking gun. Il s’agit d’un pistolet à fumée, dans lequel vous incorporez des copeaux de bois. Cela vous permet de fumer directement votre shaker, un verre ou encore une carafe.
Le cocktail fumé sans dépenser d’argent
Si vous n’avez pas de matériel et aucun budget à investir, tout n’est pas perdu. Vous aurez besoin d’un petit bâton de bois, par exemple du cerisier ou du noisetier, capable de tenir droit sur un support. À l’aide d’une allumette, vous brûlez l’une des extrémités. Puis, vous reposez le morceau bien droit. Ensuite, vous prenez une carafe, vous la retournez et vous placez le goulot au-dessus du bois fumant. Quand votre carafe est remplie de fumée, vous la retirez et vous la fermez avec un bouchon. Une fois que votre cocktail est prêt, vous le filtrez dans la bouteille. Vous remuez ensuite pour que votre boisson prenne le goût fumé. Vous pouvez enfin servir votre cocktail dans un verre avec un effet fumant.
